Ingredients

  • 2–4 salmon fillets
  • 1 tbsp olive oil
  • Salt + black pepper
  • 1 lemon (half for slices, half for juice)
  • 2 tbsp butter
  • 1 clove garlic, crushed (optional)
  • Greens: kale, spinach, spring greens, or wild greens in season
  • Optional: handful of herbs (parsley, dill, or foraged sorrel)

Method

  1. Build a calm ember bed. Let the fire burn down until you have steady, even heat.
  2. Season the salmon. Oil, salt, pepper, lemon slices on top.
  3. Cook gently. Place salmon in a foil tray or cast iron pan. Set near the edge of the embers. Cover loosely with foil if needed.
  4. Prepare the lemon butter. Melt butter with garlic (optional). Add lemon juice. Stir.
  5. Wilt the greens. Toss greens into a pan with a pinch of salt and a spoon of butter/oil. Let them soften.
  6. Finish. When salmon flakes easily, spoon lemon butter over the top. Serve with greens and herbs.
